Sweet Potato with Torched Meringue

This is a recipe makes for a great appetizer and is really simple.  Peel a sweet potato and then slice it into coins.  Using a cookie cutter punch out rounds or other shapes to give a nice uniformed shape.  Place them on a sprayed sheet tray and drizzle olive oil, a squeeze of fresh orange, fresh thyme, and salt and pepper. I bake them in a 350 oven for 15-20 minutes.  If you cook them to long they are hard to pick up.  Let them come to room temperate.  You can use a homemade meringue but the easy short cut is to use fluff.  put it in a piping bag and squeeze a dollop onto the coin.  now you need to torch the fluff for the look.  I garnished them with orange zest and a drizzle of a nice balsamic glaze.
